Red Velvet......or.......Watermelon Cake!!!!!

Hey guys, hope everyone had a Happy 4th of July!!! I know that I did. I made a watermelon cake for the first time ever. And let me tell you, it is not as easy as it seems. I do not have any pictures because I was running behind schedule and when I got to the party the cake seemed to have disappeared!! LOL.

So here is what you need:::
Watermelon
Fruit (I used strawberries, blackberries, and raspberries)
Whip Cream
Patience (You need a ton)
Almonds (I didn't really care for the taste together, next time I will try pecans)

The first thing I did was slice the ends of the watermelon. Depending on how big you want the slices to be, you can leave it whole or cut it in half. I cut mine in half. It would be best, well in my case it was, to slowly slice the rind off of the watermelon.  As long as your knife is really sharp, then it will go quickly. Just take a little off at a time. I had prepped the watermelon the night before but I had to work and had to rush the whip cream. Normally you let whip cream thaw out overnight in the fridge. I had to whip mine in the mixer. Doing this created a thinner consistency than what I needed.

While I was icing the watermelon, it became runny :(. But I went on. Once I iced half of the watermelon, I took a handful of almonds and lightly pressed them into the sides. Once I went around the entire watermelon I placed the strawberries, blackberries, and raspberries on top.

I then placed the entire thing back in the fridge to try and thicken up the whip cream.

When I got to the party, everyone thought it was a red velvet cake. And they LOVED it....so give it a try and tell me what you think.....
